Soft Homemade Skillet Flatbread (Pita Style)
Cover the bowl with a clean kitchen towel. Place in a warm spot for 45–60 minutes until slightly puffed.
Transfer dough onto a floured surface. Divide into 8 equal pieces and roll each into a smooth ball.
Use a rolling pin to roll each dough ball into a round disk about 6–7 inches across, keeping the thickness even.
Heat a dry non-stick skillet or cast-iron pan over medium-high heat. Place a flatbread in the pan and cook for ~2 minutes until bubbles form. Flip and cook for another 1–2 minutes until toasted spots appear.
Transfer cooked flatbreads to a plate and immediately cover with a clean towel to trap steam and maintain softness. Repeat with remaining dough.
