Grandma’s 3-Ingredient Crispy Low-Carb Clouds
Sprinkle half of the ground pork rind mixture over the whipped egg whites. Gently fold with a silicone spatula using a downward-and-over motion. Add the remaining pork rind dust and fold just until combined.
Drop rounded tablespoon mounds of the mixture onto the prepared sheet, leaving 1 inch of space between each. Bake at 320°F (160°C) for 15 to 20 minutes until uniformly golden-brown.
Allow the clouds to cool on the baking sheet for 5 minutes to set their shatteringly crisp texture before serving.
Storage & Re-Crisping

Storage: Store in an airtight glass container for up to 2 days. Adding a food-grade silica desiccant packet helps keep moisture out.

Re-Crisping: If the clouds lose their crunch due to humidity, reheat in an oven or air fryer at 300°F (150°C) for 3 to 4 minutes.
