Peeling hard-boiled eggs often ends in frustration, with the shell tearing off pieces of egg white. French chef Jacques Pépin uses a simple, reliable technique to ensure eggs slip out of their shells cleanly every time.

How the Pinprick Hack Works

Inside every egg is a small air pocket at the broad (wider) bottom end. As an egg boils, expanding air and moisture can press the egg white against the inner shell membrane, causing it to stick. Piercing a tiny hole lets this trapped air escape as the egg heats up, preventing vacuum pressure and allowing the shell to slide off smoothly.

Step-by-Step Method

1.Pierce the Broad End:Targets the internal air pocket.

Take a clean pin, thumbtack, or egg piercer. Gently pierce a tiny hole into the broad end of the raw egg. Push just far enough to puncture the outer shell without cracking the egg structure.

2.Lower into Boiling Water:Hot water prevents membrane sticking.

Bring a pot of water to a rolling boil. Carefully lower the pierced eggs into the boiling water using a slotted spoon.
